I am an experienced consultant specializing in food service operations.

We solve problems for the food service operator. We coach at all levels for all sizes of operations from initial planning, to preopening, to ongoing issues. This would include food and liquor costing problems, menu work and analysis, budgets and forecasts, labor analysis, and purchasing systems and raising sales volumes.

I would like to be introduced to restaurant owners or operators who are having difficulty and could use some objective, experienced coaching.

BS in mathematics and economics from Ball State University, Indiana

I had the good fortune of being one the cofounders of the Sea Galley Restaurant chain in the 80's. We did this from the ground up one restaurant at a time and worked every position in the operation. Expansion efforts eventually got us to fifty outlets along with a successful public offering. After Sea Galley I was asked to invest and or consult on many food service projects. These ranged from a double drive thru hamburger outlet start up chain out of Canada to a full service pizza restaurant in Sai Pan in the South Pacific with many projects in between. I recently finished up a project with a group that purchased four mini casinos in the area; they retained me to help in the organizing and consolidating of their resources and to streamline their five food service operations.
